Considering it's a low security prison I would conspire a mass breakout with the other inmates, we all head off in groups of two to five and if the cops find us we either overpower the single cop in question or split up to better our chances, trying to chase several people at the same time will put a strain on local law enforcement resources, let alone several groups.
