my question is how does the human brain store and learn information

does it store it in files and folders like a computer
and retrieve it in memory

The brain uses trees.

Signals are received and sent based on where branches of neurons connect. It is about making sure they connect in such a way as to store new information well at the same time retaining the old information. This can happen by a redundancy process, practically it only stores new information well discarding information it constantly sees happening. When the branches predict the same information happening over and over it does not need to change much. New information becomes more compressed when branches interweave with themselves, getting signals to be where they need to be.

my question is how does the human brain store and learn information
First there is something in the brain that resonates with information from the outside.
Second the information triggers neurons to be active. The neural nets, then rewire and send signals according to your brain architecture, and layout of neurons.

Over the day this information accumulates constantly being processed activating various parts of the brain, then it builds up, and you go to sleep where the brain switches off certain active networks, and starts integrating information into long term memory. Once that happens the information is no longer just in the parts of brain where the information was received, but its dispersed in various parts of the brain where the memories hooked up and got glued associativity. Its kind of like a computer HDD, but instead of just being in one place its spread out all over the neo cortex, or other brain parts. There is also emotional and other learning in the brain. Not sure how that works, but most of the learning we consider learning happens in neo cortex.

one interesting thing is how vision works. The classical model of vision is that the eyes send signals to the brain and the brain interprets the signals. It was found that this is not the primary mode of vision - instead most signals go the other way, from the brain to the eyes. In particular, the brain generates images it expects to see and sends that to the eyes. Only if that expectation was wrong do the eyes send information back to the brain about the difference between reality and expectation.

in other words, most of what you see is created by your brain. To me that is probably related to how dreams work as well - these are simply remnants of the image-generation process that the brain performs constantly throughout the day.
