I don't think Death Note is a very "thinking" show, sure the narrative is complex but it's a pretty superficial form of complexity aimed solely at generating suspense. Sort of like Nolans films, they feel complex because you're introduced to new information and systems, but once you got it an em down there ain't much left to think about or ponder over.
Haven't seen Code Geass tho!
I wouldn't fully agree with the premise that DN is complex only because of the new info. Basically when you get anything at all down there is not much to ponder about, so it's about catching up with the flow, I guess. But even if you do, the badass characters do not hesitate to fill in that hole.
Code Geass shares a lot of elements with the DN, but it has a lot more magic and techno in it. Basically the same drill, only that CG is maybe a bit more enjoyable to watch (if Death Note had 100 episodes, the viewers themselves would eventually get heart attacks). It has a lot more additional stuff besides the plot that DN does not have, but no spoiling.
First three episodes would be enough to tell you what the show is all about.

Code Geass is certainly amusing, but hardly a thinking show. Particularly R2, which is essentially an endless sequence of ass-pulls (which, I suppose, does make it similar to Death Note).

That's a favourite for sure. Not a fan of the dub though.
Anything that requires you to (usually) think (a bit) about what a certain character will do to avoid a series of events, qualifies as a thinking show to me, it there is enough of it, of course.
A thinking show would be one where profound social, ethical or philosophical issues are the very essence of the story, explicitly stated or not, and not a superficial gloss on the plot. A show that makes you wonder how a complex plot will be resolved is just a thriller (which is a different, not mutually exclusive, category).
So, right now I'm watching Durarara. I wish I knew wtf was going on.
