Do they bleed? I was informed by a zombie expert that they do not because the cell activity would cease (presumedly because they are dead?) but when they are re-animated (or however else they rediscover their legs (feel free to enlighten me)) what impact would it have upon the blood flow/fluids?

(I'm actually looking for serious discussion on this matter, as absurd as it may seem)

Depends on your reference. Most horror survival games will have them bleed when injured (to show an injury on an undead I guess), but I don't typically think of them as bleeding in a natural sense.

They may bleed if they are dragging a limb though.

I'm curious, why you want want to know about zombies.

That also depends on your source. A zombie can probably take the form of just about any living animal, though most people think of humans as your typical zombie (because of movies and such).

Zombies tend to not be intelligent creatures, and are usually shown as masses acting on base desires (mostly eating). They are usually slow and take on tasks with a single minded approach (being stubborn).

Some of newer media with zombies portray them as having more intelligence than normal, or that they can move quickly (later movies in the Resident Evil series, 28 days later probably counts as well, Dawn of the Dead, etc.)

I'm no zombie expert but...

There are the paranormal ones that just happen from some unexplained phenomena
there are the kind that have a virus
There are the kind that are created-usually VERY similar to the kind that have a virus
And there are the voodoo/magic kind

These are probably the most common kind and the only ones I can think of.

I think it was Day of the Dead that had slightly intelligent zombies.
It's also cliche that they want brains....they seem to just like organs in general for snacking.

Er...it depends on what type of zombie you're dealing with, I suppose? I'm not really a zombie 'expert', but I will throw out a few ideas. If you're dealing with the 'voodoo zombie', then you'll get blood, because they're just normal people who've been cursed - according to what legend says, anyhow. Then there are the 'rabies'-type zombies (i.e. 28 days later, Left4Dead), which would most likely bleed as well, if the virus is indeed something similar to rabies (i.e. affecting behaviour only, and not the physiology of the human body, which would be pretty much identical to a survivor's - aside from, apparently, the ability to synthesize all necessary nutrients/amino acids/CHO requirements from raw meat, but anyhow...) Finally, there are the 'classic' zombies - the ones from Resident Evil, Night of the Dead, and their ilk. This one...I'm not really sure about. I'm going to say that since the victim would technically be 'dead', their blood wouldn't be in liquid form/clot unless the corpse was fairly fresh (within a few days, maybe?) After that time, I'd think that the blood would decompose/be reabsorbed...given, of course, that the zombie doesn't need it/their physiology is radically different from normal human physiology.

Lastly, there are corporate zombies...and I think everyone knows about those ;). If you're looking for more stuff about zombies, there's a tongue-in-cheek 'survival guide' called (aptly enough) The Zombie Survival Guide. Amusing - and useful in case of a pandemic (you never know!)

Considering I've spent the majority of my time since middle school obsessed with zombies, I'd like to pretend I'm an expert. It really depends on the series/work you are talking about. The shambling corpses would not bleed because of reasons mentioned above. However the Living Dead "Romero" style zombies (the original rotting corpses as far as I can tell) are also capable of learning, in Day and Land of the Dead zombies slowly remember how to use guns (specifically only two zombies). Not that that has anything to do with them bleeding or not.

they don't have heart-beats, but there is blood in their veins, so if you pierced a vein blood would flow out, where gravity would allow, but they wouldn't really bleed...

Mutagen Zombie
These zombies aren't technically dead, but they're not human either, having been infected by some manner of mutagen they've mutated into inhuman monsters designed for the sole purpose of spreading the infection, these are you Resident Evil type zombies, only a bullet to the head or extreme disruption of biomass will do, even then burning the corpses is highly recommended.
Or you could intentionally get yourself infected, sure it's a one-in-a-billion chance but your genetics could synchronize with the mutagen and turn you into Homo-Sapian-Superior, or a hideous freak.

Nanotech Zombie
Bad news, very bad news, much like the mutagen zombies but with nanotech, so they regenerate twice as fast, feed off ambient energy, and are probably smarter than you, i.e. there's no hope, you may not even get a chance to scream.

Cyborg Zombie
Not as bad as the nanotech zombies, but still pretty damn bad, the cyborg zombie is what you get when a cyborg becomes a zombie (no, duh) and if the whole undead thing didn't make them hard enough to kill before, now they're practically invincible.
Not to be confused with the cyborg living dead, they're people who have cheated death by altering their failing bodies with technology, they tend not to be infections, unless we're talking about personalities.

Armageddon Zombie
So hell's full and the worst of the worst are fighting their way to the top and breaking out, now corpses all over the world (and the occasional weak minded person) are being possessed by these malevolent spirits, ushering in hell on earth until the end of time.
Sodomites will have fun.

Voodoo/Hypnosis Zombie
Not really a zombie as such, just someone who has been mindfucked into serving some twisted master, not really dangerous or even infectious, but you still need to be careful, they're surprisingly clever sometimes and can blend into general society.

Necromancy Zombie
Skeletons, liches, wraiths, vampires, zombies, etc.
Get a big stick and start pummelling, these D&D has-beens are pathetic.
