I'm not a big fan of anime openings. Actually, I listen to a lot of Japanese music but next to none that qualifies as J-Pop/Rock. Besides the obligatory NGE and Cowboy Bebop, I can only think of Umineko and Rainbow as animes with exceptional music. Rainbow is an odd case because it gets next to no coverage although it is by far the best anime in the last years but it took very long until it got subbed. It's still running definitely worth checking out.

Sure I listen to it... when I am playing games or watching anime. If you are asking if I seek it out as a genre, then no.

Memorable ones that come to mind:
-Most of the music that Jesper Kyd did for the 'Hitman' series of games.

-A few of the songs from Elfen Lied, especially the theme.

-The Max Payne soundtrack. Wow, that music really set the tone and reinforced the atmosphere in those games.
