As semi nerd historian I think historians are to blame for these myths.
Aztecs were basically the equivalent of Romans. They were the most warlike of all Indians, and fought Cortez with 40 000 + armies. The problem was they were some said afraid of horses and Spaniards knew this so they often charged their formations on horse and single-handedly killed their generals. If their general got killed they lost the will to fight. Adding guns and armor, effectively few hundred Spaniard conquistadors defeated 1000s of them in battles.

Aztecs were great at building with stone, but so was any civilization before 1800s.
Stone and wood was all people knew. We lost this skill set to work with stone, ergo stone masonry, because we started using steel, and concrete.
Every old civ, had its own style of stone masonry.
Historians still speculate how Egyptians, Romans, or Greeks done it.
This is Roman wall no different from Aztec one.
